Vegetarian Soup
Vegetarian Soup
Ingredients:
2 bell peppers
3 Tbsp olive oil
1 cup chopped onion
2 tsp ground cumin
1/2 tsp crushed red pepper
1 tsp paprika
4 tsp garlic powder
2 cups vegetable broth
1 1/2 cups cubed, peeled butternut squash
1 28oz can diced tomatoes
1 can pinto beans, drained and rinsed
1 can red kidney beans, drained and rinsed
1 can cannellini beans, drained and rinsed
1/2 cup thinly sliced green onions
Directions:
1. Preheat broiler.
2. Cut bell peppers in half lengthwise. Remove and discard seeds and membranes. Place pepper halves, skin side up, on a foil lined baking sheet. Broil 15 minutes or until blackened. Let peppers stand 15 minutes and then dice them.
3. Over medium heat, heat oil in a pot. Add onions and cook 15 minutes stirring occasionally. Add spices and cook for two more minutes stirring frequently. Add bell peppers, squash, tomatoes, and broth then bring to a simmer. Cook 20 minutes, stirring occasionally.
4. Add beans and simmer 25 minutes or until slightly thick, stirring occasionally.
5. Top with green onions.
