Bean Cookies

School is going great! I'm loving every minute of it and still enjoying my new ward and roommates! They are tons of fun. This past weekend I drove went up to BYU-Idaho with Amber and surprised Brooke with a short visit. We crashed at her apartment and had a ton of fun. Kate Corbett also joined us because Carson drove up as well.

Bean Cookies

Ingredients:

1 cup Old Fashioned oats
1 15oz Great Northern beans, rinsed and drained
1/4 cup + 1 Tablespoon applesauce
1/4 cup honey
2 teaspoons vanilla
1/4 teaspoon nutmeg
1 teaspoon baking soda
1 teaspoon baking powder
1 cup white whole wheat flour
1/4 - 1/2 cup dark chocolate chips (or any mix it)


Directions:

1. In a food processor or blender, blend together the liquid ingredients and the oats.
2. Transfer to a mixing bowl and add the remaining ingredients. Mix until well combined.
3. Bake at 350 degrees for 13 to 15 minutes.

Note: My favorite mix in has been 
chopped up Reese's or dark chocolate chips.
